Make the Filling: In a medium bowl, mix together the cream cheese, powdered sugar, egg, and vanilla until smooth and creamy. Spread this mixture over the dough, leaving about 1/2 inch at the edges. Then, top with the cherry pie filling.
Decorate and Bake: Cut the 4 reserved dough triangles into thirds, starting at the wider end. Arrange these strips over the filling, pressing the ends to seal at both the center and outer edges. Bake for 25 to 30 minutes, or until golden brown.
