Rolling and Cutting
After the resting period, it’s time to roll and cut your doughnuts. On a well-floured surface, roll out the dough to about 1/2 inch thickness, forming a 12-inch square. Using a 3-1/2- to 4-inch round biscuit cutter, cut out 9 doughnuts and place them on a floured baking sheet. Cover them with plastic wrap.

Let the doughnuts rise in a warm place for 2 to 3 hours, or until they have doubled in size and feel soft and pillowy.
