Christmas Cranberry Pound Cake

Frosting and Garnish

Frosting:

  • 56 grams (1/4 cup) unsalted butter, softened
  • 112 grams (4 oz.) cream cheese, softened
  • 1 and 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract

Garnish:

  • Handful of dried cranberries
  • 1 tablespoon vegetable oil
  • 1/2 cup white chocolate chips
  1. Cream together butter and cream cheese. Gradually add powdered sugar and vanilla extract until smooth.
  2. Spread over cooled cake and refrigerate until set.
  3. Melt white chocolate chips with oil, cool slightly if too thin.
  4. Sprinkle cake with dried cranberries and drizzle with chocolate.

Note: If using frozen cranberries, thaw, rinse, and dry them first.
