Frosting and Assembly

It’s time for the final touches – frosting and assembly!

  1. In a large mixing bowl, combine cream cheese and butter. Beat with a whisk attachment for 3 minutes. Add in sugar, vanilla, and heavy cream. Beat for 3-4 minutes until light and fluffy. Fold in chopped pecans.
  2. To assemble the cake, place one layer of carrot cake on a plate. Add the cheesecake and then top with the second layer of carrot cake. Spread the frosting, first on the sides, then on top!

Store the cake in the refrigerator, covered, for up to 3 days. Enjoy
