  1. First, you’ll start by preparing the egg yolk mixture. Preheat your oven to 350 degrees F. Then, in a medium bowl, combine the egg yolks, sugar, salt, corn syrup, vanilla, and water. Beat the mixture until it’s fluffy and pale yellow. Set it aside once it’s ready.
  2. Next, it’s time to make the egg white meringue. In a separate bowl, beat the egg whites until they start to get foamy. Gradually add in the sugar and beat until firm peaks form.
  3. Combine the egg white meringue with the egg yolk mixture, gently folding until it’s mostly mixed. Then, sift in the flour and baking powder, folding after each addition.
  4. Prepare the rest of the batter by adding in the oil and the remaining egg white meringue. Then, bake the batter in a round cake pan until golden brown.
  5. Remove the cake from the pan and let it cool on a rack. While it’s cooling, prepare the whipped cream frosting and cake syrup.
  6. Slice the cake into even layers and brush each layer with the sugar syrup. Then, add a layer of cream and sliced strawberries, repeating as necessary.
  7. Finish by frosting the top and sides of the cake with whipped cream and decorating with whole strawberries and a sprinkle of powdered sugar. Your delectable strawberry sponge cake is now ready to be served!
