Compote Love and Post-Freeze Delight
If you’ve made a heap of compote, there are two ways to go: use silicone molds for individual portions or freeze little disks on a tray. In either case, an overnight freeze, followed by unmolding and packaging is the way to go.

For serving, a warm water bath or a night in the refrigerator, and you’re good to go. As for our frozen beauties, let them sit in the fridge for 6 hours or at room temperature for an hour. For pies, a short 160°C (320°F) oven reheat for 20 minutes should do the trick!
