Easy Morteau Sausage Gratin from Franche-Comté

First, preheat your oven to 375°F (190°C). While the oven is preheating, peel the potatoes and slice them into thin rounds.

Next, place the potato slices in a large pot and cover them with cold water. Bring the water to a boil and cook the potatoes for about 5 minutes, or until they are just tender.

In the meantime, bring a separate pot of water to a simmer and add the Morteau sausage. Let it simmer for about 20 minutes, then remove it from the water and allow it to cool slightly.

Once the sausage has cooled, cut it into slices and set it aside.
