To begin, preheat your oven to 375°F (190°C) and grease a large baking dish. Peel and thinly slice the potatoes, then layer them in the bottom of the dish.

Next, slice the Morbier cheese and place it on top of the potatoes. Follow this with a layer of thinly sliced onions and the Morteau sausage, also thinly sliced.

In a small bowl, mix together the white wine and crème fraîche. Pour this mixture over the layers in the baking dish, making sure to evenly coat everything. Season with freshly ground pepper to taste.
