Delicious Mini Foie Gras and Apple Tatins

1. Preheat your oven to 375°F (190°C).
2. Peel and core the apples, then cut them into thin slices.
3. In a pan, sauté the apple slices with the 4-spice mix for a few minutes, until they are soft.
4. Add the cognac or calvados to the pan and let it cook for about a minute.
5. Sprinkle some sugar on top of the apples and let it caramelize for a few more minutes.
6. Season the foie gras slices with salt and pepper.
7. Cut the slices of gingerbread into rounds that are the same size as the foie gras slices.
8. Place the foie gras on top of the gingerbread rounds and then add a spoonful of the apple mixture on top of each one.
9. Transfer the mini tatins to a baking dish and bake in the preheated oven for 10-12 minutes, or until the foie gras is slightly melted and the gingerbread is golden brown.
10. Once done, remove from the oven and let them cool for a few minutes before serving.
