1. In a large bowl, mix together the ground beef, egg, finely chopped onion, pressed garlic, gyro spices, mild paprika powder, hot paprika powder, and olive oil. Season with pepper and Maggi seasoning.
2. Soak the slice of bread in water and squeeze out the excess liquid. Crumble the bread into the bowl and mix everything together until well combined.
3. Divide the meat mixture into equal portions and shape each into a patty. Place a small amount of crumbled sheep’s cheese in the center of each patty and form the meat around the cheese to encase it completely.

Cook the Biftekis:
1. Preheat a grill or grill pan to medium-high heat. Cook the biftekis for 5-7 minutes on each side, or until they are cooked through and have nice grill marks.
