Delicious Split Pea Soup

1. Start by soaking the dried green peas in water for a few hours to rehydrate them.

2. In a large pot, heat the oil over medium heat. Add the pancetta and cook until it’s browned and crispy. Remove the pancetta from the pot and set it aside.

3. In the same pot, add the diced onions, leeks, carrots, and potatoes. Cook until the vegetables are soft and fragrant.

4. Add the lamb pieces to the pot and cook until they are browned on all sides.
