Plum Jam Swiss Roll: A Soft and Delicious Dessert!

1. In a bowl, add the eggs and sugar and mix until the sugar dissolves and the mixture becomes frothy. Sift in the flour and baking powder and whisk until everything is well combined.

2. Add the lemon zest and lemon juice to the batter and gently fold in the ricotta cheese. Be careful not to overmix.

3. Grease a cake pan and pour in the batter. Top the batter with dollops of plum jam and walnuts, swirling them into the batter with a knife.

4. Bake the cake in a preheated oven at 350°F (175°C) for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

5. Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
