Braised Beef with Mushrooms

1. Preheat your oven to 300°F.
2. Cut the beef into large cubes and season with salt and pepper.
3. In a large Dutch oven, heat the olive oil and brown the beef cubes on all sides. Remove and set aside.
4. In the same pot, add the sliced onions, the carrots cut into rounds, and the crushed garlic cloves. Cook until tender.
5. Sprinkle with flour and stir well.
6. Add the red wine, the bouquet garni, and return the meat to the pot.
7. Cover and bake for 3 hours.
