Alaskan Halibut with Prunes: A Sweet and Savory Delight

2. Peel and thinly slice the onion, then in a hot pan, heat the 2 tablespoons of olive oil and add the onion, cooking it covered for about 15 minutes. Set aside.

3. Peel and finely chop the shallot. In a saucepan, melt the butter over low heat. Once completely melted, add the shallot and cook for a few moments, then add the cream. Season with black pepper and remove from heat.

4. Dice the fish and sear with a drizzle of olive oil over high heat.

5. In a gratin dish, arrange a layer of sweet potato slices. Add the caramelized onion, fish cubes, prunes, salt, and pepper. Bake at 180°C for 10 minutes.

6. Just before serving, add fresh thyme and serve with the butter cream and basmati rice.
