Deliciously Timeless Cherry Filling

1. In a saucepan, combine cherries, sugar, and water. Cook over medium heat, stirring occasionally, until the cherries release their juices and the sugar dissolves.
2. In a small bowl, mix cornstarch with a couple of tablespoons of water to create a slurry. Add the slurry to the cherry mixture, stirring constantly.
3. Continue to cook the mixture over medium heat until it thickens. This may take about 5-7 minutes. If using, add almond extract and lemon juice and stir to combine.
4. Once the filling has thickened, remove it from heat and let it cool. The filling will continue to thicken as it cools.
5. Once cooled, you can use the cherry filling in pies, tarts, cakes, or other desserts.
