#### Baking the Gougères

Gently fold the comté cheese cubes into the dough. The goal is to distribute them evenly, as they will melt in the oven. Place the dough onto a baking sheet lined with parchment paper, shaping them into ping-pong-sized balls, or creating a circular shape, leaving enough space between each one. Bake at 190°C for 20-25 minutes for individual gougères, and 40 minutes for a larger ring shape. Keep an eye on them and open the oven door periodically to release any moisture, which can make the gougères soggy. For an extra precaution, you can even prop a wooden spoon in the oven door to keep it slightly ajar.
