Method
1. Start by cooking the onions until they’re softened. Once done, remove them from the pan and let them drain on a paper towel.

2. Add the bacon to the same pan and cook until it’s lightly browned and crispy. Remove the bacon and let it drain on the paper towel with the onions. Remember to reserve about 2 tablespoons for topping later.
3. In a large bowl, whisk together the eggs, milk, season all, mustard, and a pinch of salt and pepper.

4. Add the bread cubes, 1 1/2 cups of cheese, cooked onions, and bacon to the egg mixture. Make sure to mix everything well. Cover the bowl and set it aside in the fridge for at least 30 minutes, allowing all the egg to soak into the bread.
