Blackberry Cake Instructions:
- Preheat your oven to 335ºF (168ºC) and prepare two 8″ round cake pans.
- Divide your buttermilk, mixing part with oil, and the other with eggs, lime zest, and juice.
- In your mixer, blend the dry ingredients, then incorporate the butter until a sandy texture is achieved.
- Add the milk/oil mixture, then the milk/eggs/zest mix in parts, ending with lime juice.
- Fill your pans with the batter, add puree, and swirl, then top with floured blackberries.
- Bake for 30-35 minutes and let cool before assembling with buttercream.
