The Berry Best of Cakes: Blackberry-Lime Delight!

Blackberry Cake Instructions:

  1. Preheat your oven to 335ºF (168ºC) and prepare two 8″ round cake pans.
  2. Divide your buttermilk, mixing part with oil, and the other with eggs, lime zest, and juice.
  3. In your mixer, blend the dry ingredients, then incorporate the butter until a sandy texture is achieved.
  4. Add the milk/oil mixture, then the milk/eggs/zest mix in parts, ending with lime juice.
  5. Fill your pans with the batter, add puree, and swirl, then top with floured blackberries.
  6. Bake for 30-35 minutes and let cool before assembling with buttercream.
