Spectacularly Spooky Pumpkin & Dark Chocolate Halloween Cake

Let’s Get Cooking:

1. Steam the peeled and diced pumpkin for about 20 minutes until soft and tender.

2. Preheat your oven to 350°F (180°C). In a large bowl, whisk the eggs vigorously. Add the maple syrup, sifted flour, melted butter, and sunflower oil. Give it a good mix, making sure there are no lumps and you have a smooth batter.

3. Pour half of this mixture into another bowl. Blend the steamed pumpkin until you get a fine puree. Now, combine this puree with the batter in one of the bowls.

4. In a double boiler, melt the dark chocolate. Once it’s melted and smooth, fold it into the batter in the second bowl.
