In a bowl, mix together the flour, sugar, baking powder, baking soda, and salt. Then, add in the margarine and oil and mix it all together. Gradually add the warm milk or water and knead the dough for about 8 minutes. It should be bouncy and a little harder than mandazi dough. Cover the dough and allow it to rest for at least 30 minutes.

Once the dough has rested, roll it out and cut it into square shapes, about 1 inch thick. Then, heat some oil in a pan until it’s hot, and then reduce the heat to low. Deep fry the dough squares under low heat, flipping them occasionally, until they are brown on both sides.
Once they are cooked, remove the Halfcake/Kangumu from the oil and allow them to cool down for at least 30 minutes to get that perfect crunchiness. And there you have it! A delightful treat that’s perfect for snacking or dessert.
