But where did the brownie come from?

Baked in a rectangular tin and then sliced into small individual pieces, brownies are designed to be portable. Their gooey heart doesn’t drip, and the crunchy top doesn’t crumble. As for its origin, there are a couple of legends.
First, a housewife might’ve forgotten to add yeast to her chocolate cake mix, ending up with a non-risen, dense cake, barely baked in the middle.

The other story is about a chef from a Chicago hotel who received a unique request: create a dessert for the city’s women’s committee that could be carried in a lunchbox.
Both stories seem plausible. But three things about brownies are undeniable: they’re distinctly American, yeast-free, and originated in the early 20th century.

The omnipresent brownie flavor
It was much later that nuts were added to the mix. Today, brownies have become such a synonym for indulgence that they come in industrial versions, ice-cream flavors, pie form, and even as tiramisu. There’s also the vegan variant and, paired with its cousin the cookie, we get the ‘brookie’.
