- Beat the eggs finely and leave at room temperature 45g of butter
- Sift the 300g of strong flour and mix with yeast, sugar, salt, and half of the egg water. Gradually add 150ml of warm water as you mix until the dough is smooth and elastic.
- Place the dough in a bowl and let it rise in a warm place until it doubles in size.
- Remove the gas by pressing the dough with your fist.
- Divide the dough into 12 pieces and shape them into rolls. Let them ferment for 15 minutes under a cloth.
- Shape each piece into a triangle and roll inwards from the wide part.
- Place the rolled dough on a pan and let it rise for another 30-40 minutes. Brush with a mixture of egg yolk, water, and butter.
- Bake at 180’C for 12 minutes until golden brown.
