How to Make Pumpkin Syrup
Begin by peeling the squash and cutting it into large cubes. Boil these cubes for about 20 minutes. Once done, drain and blend to get a smooth purée.

In a saucepan, mix the pumpkin purée with spices, water, sugar, and vanilla seeds. Let it simmer on medium heat for about 10 minutes, stirring occasionally to infuse the spices. Once done, remove from heat and strain the syrup through a fine sieve.
Store the syrup in a sterilized glass bottle and let it cool. This can last in the fridge for up to a month.
