Quick and Simple No-Bake Chocolate Oat Bars

First, in a saucepan over low heat, melt the butter and brown sugar together. Once melted, stir in the vanilla extract, rolled oats, ground cinnamon, and kosher salt until well combined.

Press the oat mixture into a parchment-lined baking dish and place it in the fridge to chill.

While the oat mixture is chilling, melt the dark chocolate chips and chunky peanut butter together in a microwave-safe bowl. Stir until smooth and creamy.

Pour the chocolate-peanut butter mixture over the chilled oat base, spreading it out evenly with a spatula.

Return the baking dish to the fridge and let the bars set for at least 2 hours, or until firm.
