I recently had the pleasure of dining in Mexico at one of my favorite taco restaurants. The food was so incredible that it made the long lines and crowded seating all worth it. I couldn’t help but envy the order of the person sitting next to me. He had the most amazing al pastor-stuffed avocado, and it looked absolutely mouth-watering. The combination of pastor on top of an avocado with a layer of fried cheese in between was simply irresistible.
