1. Heat a non-stick frying pan or skillet over medium heat.
2. In a small bowl, whisk the eggs together until well beaten. Season with salt and pepper.
3. Spread butter or oil on one side of each bread slice.
4. Place one slice of bread, buttered side down, in the preheated pan.
5. Pour half of the beaten eggs evenly over the bread slice in the pan.
6. Sprinkle half of the shredded cheese on top of the eggs.
7. Place the second bread slice on top of the cheese, buttered side up.
8. Cook for a few minutes until the bottom slice of bread is toasted and the cheese starts to melt.
