In a large bowl, cream together the butter and 1 1/2 cups of sugar until smooth. Beat in the egg and vanilla (and almond extract if using). Gradually blend in the dry ingredients until everything is well combined.

Now, it’s time to shape the cookies! Roll rounded teaspoonfuls of dough into balls and place them onto the prepared baking sheet. Use the bottom of a glass to slightly flatten the top of each ball. Sprinkle the tops with the remaining granulated sugar for the perfect finishing touch.
