- In a bowl, put the chopped bananas. Crush them with a fork until you get a kind of puree. Set this puree aside as it will be the base of our banana cake.
- In another bowl, beat the eggs with a whisk until they double in size. Then add the vanilla extract, sugar, milk, a pinch of salt, and melted butter. Beat again until all the ingredients are well combined.
- Sift the flour and baking powder over the egg mixture. Mix everything together until well integrated. Then add the reserved banana puree and mix until fully combined.
- Grease a baking pan with butter, and pour the batter into it. Place the pan in a preheated oven at 190ºC, and bake for about 40 minutes.
- To check if the cake is done, insert a toothpick into the center. If it comes out clean, it’s ready. If not, bake for a few more minutes. Once fully cooked, remove the cake from the oven and let it cool for about an hour to set.
