Delicious Egg and Potato Hash

Start by preheating your oven to 375°F (190°C). Then, peel the potatoes and cut them into thin slices. Place the potato slices in a large baking dish, drizzle with olive oil, and season with salt and pepper. Bake in the preheated oven for 15-20 minutes, or until the potatoes are just starting to soften.

While the potatoes are baking, cook the bacon in a skillet over medium heat until it’s crispy. Once the bacon is cooked, remove it from the skillet and set it aside.

Once the potatoes are done baking, remove the dish from the oven. Sprinkle the grated mozzarella over the top of the potatoes, and then create small wells in the cheese and potato mixture to crack the eggs into. Carefully crack an egg into each well.
