First, toast the bread until it’s nice and crispy. While the bread is toasting, slice the hard-boiled egg into thin rounds. Once the bread is ready, spread a generous amount of the herbed cream cheese on top.

Next, layer the tomato and cucumber slices on top of the cream cheese. Sprinkle the finely sliced leeks on top, and then place the hard-boiled egg rounds on top of everything.

In a small bowl, mix together the whole grain mustard, salt, and pepper. Drizzle this mixture over the open-faced sandwich, and then sprinkle red pepper flakes on top for a little kick.
