Cheesecake New-Yorkais à la Mousse d’Avocat sur Lit de Noix de Pécan

Ingredients:
For the base:
– 125g crispy pecans
– 45g coconut powder
– 70g cacao beans
– 185g pitted dates
– 3 teaspoons of room temperature coconut oil
For the avocado mousse:
– 560g avocado flesh (about 5 medium avocados)
– 200ml lime juice (about 8-10 limes)
– 1 teaspoon lime zest
– 190g pure honey
– 175ml room temperature coconut oil
– Optionally, a little bit of stevia for sweetening
