Ham and Raclette Stuffed Potatoes – Easy Cooking with Me

1. Preheat your oven to 200°C (400°F).
2. Wash the potatoes thoroughly and pat them dry. Prick each potato several times with a fork and place them directly on the oven rack. Bake for about 1 hour or until they are tender.
3. Once the potatoes are cooked, remove them from the oven and let them cool for a few minutes. Then, carefully slice off the top third of each potato and scoop out the flesh into a bowl, being careful not to tear the skin.
4. Mash the potato flesh in the bowl and mix in the diced ham, half of the raclette cheese, heavy cream, salt, and pepper.
5. Stuff the potato skins with the mixture and top with the remaining raclette cheese.
6. Place the stuffed potatoes back in the oven and bake for another 15-20 minutes, or until the cheese is melted and bubbly.
7. Garnish with chopped chives and serve hot.
