Potato Skins Stuffed Pizza-Style

First, preheat your oven to 375°F (190°C). Wash the potatoes and prick them a few times with a fork. This will allow the steam to escape while they bake, preventing them from bursting. Place the potatoes directly on the oven rack and bake for about 50-60 minutes, or until they are tender when pierced with a fork. Let them cool for a few minutes.

Once the potatoes are cool enough to handle, slice off the top third of each potato. Using a spoon, carefully scoop out the flesh from each potato, leaving a thin layer to keep the skins intact. Place the scooped-out potato into a bowl and mash it with a fork.

Next, mix the mashed potato with the diced ham, half of the shredded mozzarella, tomato puree, dried oregano, and season with salt and pepper. Spoon the mixture back into the potato skins and top with the remaining shredded mozzarella.
