To start, preheat your oven to 375°F (190°C). Next, carefully slice each potato into thin slices, making sure to stop before cutting all the way through, so that the slices remain connected at the bottom.

Once you’ve sliced all the potatoes, carefully place them on a baking sheet and drizzle 30 ml (2 tbsp) of olive oil over the top. Then, sprinkle the rosemary, thyme, and garlic over the potatoes, making sure to get the herbs and garlic in between the slices.
Now, drizzle the remaining 50 ml (3 tbsp) of olive oil over the top, making sure to coat each potato evenly.

Finally, season with salt and pepper to taste, and then bake in the preheated oven for 45-55 minutes, or until the potatoes are golden brown and crispy.
Once the potatoes are cooked through, carefully insert the cheese squares between the slices, and then return the potatoes to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.
