Smoked Salmon Eggs Benedict

Instructions:
1. Poach the eggs in simmering salted water for 3-4 minutes.
2. Meanwhile, toast the English muffins and place the smoked salmon slices on top.
3. Place a poached egg on each slice of salmon.
4. Drizzle with hollandaise sauce.
5. Garnish with chopped chives, season with salt and pepper to taste.
6. Serve immediately.
