Old-fashioned Amish Baked Custard: A Taste of Tradition

  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, beat the eggs well.
  3. Add sugar, salt, and vanilla extract to the beaten eggs. Mix until well combined.
  4. Heat the milk until it is warm but not boiling. You can do this on the stovetop or in the microwave.
  5. Gradually add the warm milk to the egg mixture, stirring constantly.
  6. Strain the mixture through a fine-mesh sieve into another bowl to remove any lumps.
  7. Pour the custard mixture into individual ramekins or a baking dish.
  8. Sprinkle ground nutmeg on top of each custard for flavor.
  9. Place the ramekins or baking dish in a larger baking pan. Fill the larger pan with hot water until it reaches halfway up the sides of the custard dishes.
  10. Carefully transfer the pan to the preheated oven.
  11. Bake for about 45-50 minutes or until the custard is set but still slightly jiggly in the center.
  12. Remove from the oven and let the custard cool. It will continue to set as it cools.
  13. Once cooled, refrigerate the custard until ready to serve.
