Step 1: In a bowl, mix the flour, baking powder, salt, and sugar (if using) until well combined.
Step 2: Add the butter to the flour mixture and combine until you get a flaky texture.
Step 3: Slowly add in ice-cold water, a little at a time, and mix until the dough comes together. Be careful not to add too much water, as the dough should be soft.
Step 4: Transfer the dough to a work surface, shape it quickly with your hands, and ensure it stays cold. Wrap it in plastic wrap and chill it in the fridge for 25 minutes.
Step 5: After chilling, roll the dough once with a rolling pin. It doesn’t need to be overworked at this point. Wrap it again and return it to the fridge for 5 minutes.
