First, start by cutting the chicken into 4 equal pieces and pound each piece so it’s about 1/4″ thick. Next, mix together the softened cream cheese, chopped green onions, and shredded Pepperjack cheese. Once that’s combined, put 1/4 of this cheesy mixture into the middle of each piece of chicken.

Now comes the fun part – starting at the long side, roll up each chicken breast, keeping the cheese mixture in the middle. Once you’ve got your rolls, it’s time to wrap 1 to 2 slices of bacon around each chicken breast. If needed, use a toothpick to secure the bacon in place.
