Make Your Own Spaetzle!

Don’t worry if you can’t find ready-made spaetzle. You can easily make your own with basic ingredients like flour, fresh eggs, salt, nutmeg, and water.

Unlike classic pasta, spaetzle dough is much softer, and there are various methods for shaping it. One option is to cut it into little strips on a wet cutting board before cooking, ensuring the noodles don’t stick together. Another method involves pressing the dough through a colander, allowing small pieces to drop into the boiling water. The more traditional approach is to use a “spaetzle maker” equipped with a scraper that slides over the pot of boiling water.

For homemade spaetzle, mix 400g of flour with 4 whole eggs, salt, pepper, nutmeg, and 10cl of water. Stir vigorously to avoid lumps and achieve a smooth batter. Then, pass the dough through a spaetzle maker or colander into a pot of salted boiling water. When the spaetzle rise to the surface, they’re ready to be enjoyed.
