Step 2: Prepare the Dough

  1. Sift the flour, salt, and baking soda into a large mixing bowl and create a well in the center.
  2. Separate the egg yolk from the egg white. Place the yolk in the well of the flour mixture and beat the egg white until stiff peaks form.
  3. Add beer or water into the well and begin mixing gently. You can also add optional flavorings like lemon zest or orange blossom water at this stage if desired.
